The Sacred Kalo and the Probiotic Poi Bowl

In Hawaiian cosmology, Kalo (Taro Root) is revered as the elder brother of humanity (Haloa). Steamed taro corms pounded on wooden boards with water create Poi, an ancestral fermented purple paste that sustained generations of islanders.
