Shade, Stone Mills, and Ancient Zen Monasteries

First brought to Japan from Song Dynasty China by Zen monk Eisai in 1191 AD, Matcha (抹茶) is shade-grown stone-ground whole green tea leaf (Camellia sinensis). By covering the tea bushes with bamboo mats (Honzu) for 3–4 weeks before harvest, chlorophyll and amino acid synthesis are dramatically concentrated.
