In the famed garlic-growing region of Taşköprü in northern Anatolia, whole unpeeled garlic bulbs (Allium sativum, Amaryllidaceae) are harvested and aged for months in barrels of natural grape vinegar, sea salt, and wild herbs to create Sarımsak Turşusu (Aged Pickled Garlic).

Over months of slow fermentation, the harsh, burning, volatile organosulfur compounds characteristic of raw garlic undergo a remarkable chemical transformation:


  1. Conversion to S-Allyl-Cysteine (SAC): Unstable, insoluble allicin and diallyl sulfides are biotransformed into water-soluble, non-irritating S-allyl-cysteine (SAC) and S-allyl-mercaptocysteine (SAMC). SAC is nearly $100\%$ bioavailable in humans, absorbed rapidly via intestinal amino acid transporters.
